KINGS’ FAVORITE RECIPES

SWEET POTATO CASSEROLE

Ingredients:

  • 3 CUPS OF COOKED, MASHED SWEET POTATOES
  • 1 CUP OF SUGAR
  • 2 EGGS
  • 1 TSP. OF VANILLA
  • 1/3 CUP OF MILK
  • 1/2 CUP OF BUTTER

TOPPING:

  • 1 CUP OF FIRMLY PACKED BROWN SUGAR
  • 1/3 CUP ALL PURPOSE FLOUR
  • 1/3 CUP OF BUTTER
  • 1 CUP FINELY CHOPPED PECANS

DIRECTIONS:

Combine sweet potatoes, sugar, eggs, vanilla, milk and 1/2 cup of butter. Beat with mixer until smooth.  Spoon into a greased 2 quart shallow casserole dish.  Combine brown sugar, flour, 1/3 cup of butter and pecans. Sprinkle over top of casserole. Bake at 350 for 30 minutes…some ovens are hotter, so check it somewhere at 30 min.  There are 8-10 servings.  I HAVEN’T TRIED IT, BUT I BET THIS WOULD BE GOOD USING ACORN OR BUTTERNUT SQUASH.

Those of you who are Diabetic, I only let my husband have 1 Tablespoon per meal. Check with your Dietican or Doctor before eating. Everyone is different, and you may not be able to have a Tablespoon or you may be able to have more.
