3 Cups Coarsely Chopped Dates (I Use Medjool Dates)
1/4 Cup Granulated Sugar (I Use Truvia)
1 1/2 Cups of Water
(You Can Add Walnuts or 1/2 Tsp. Vanilla if Desired)
TOP AND BOTTOM;
1 Cup Firmly Packed Brown Sugar
1 3/4 Cups Flour
1/2 Tsp. Baking Soda (If Using Self Rising Flour Omit Soda)
1 Tsp. Salt ( If Using Self Rising Flour Omit Salt)
1 1/2 Cups Old Fashioned Rolled Oats
3/4 Cup of Butter (1 1/2 Sticks of Very Cold Butter)
Preheat Oven to 400 Degrees.
Mix Filling: In a Medium or Small Sauce Pan Mix, (Dates, Sugar, Water). Cook on Low Heat, Stirring Constantly, Until Thickened. Let Cool For 10-15 Minutes.
Mix Crust. Mix Brown Sugar, Flour, Soda, Salt, Butter in Mixer on Low or By Hand Until Nice and Crumbly. Divide in Half.
Pour First Half into Baking Dish and Pat into Shape. Pour in Date Filling and Spread Over Bottom Crust. Pour Second Half of Crust Over Filling and Gently Press…Put in Oven for 30 Minutes. Keep Refrigerated. Can Freeze.
As my husband is Diabetic he can only have a one inch piece per meal and the meal must have only salad or low carbohydrates. This recipe makes quite a few servings especially For Diabetics. You might want to freeze so as not to overeat.
My husband does very well on these bars as they are filling and nutritious. He Seems To be able to go quite a long time before wanting to eat again…Yaaaaa! Keeps blood sugar down.
