PASTA VEGETABLE SALAD

I love this Salad when the new Vegetables begin to Grow and Ripen.  These are the ingredients I use to make a quick Pasta Vegetable Salad (you can add other vegetables as well).  Use whatever Vegetable you and your family like, but I use:

  • Tomatoes
  • Onions  I use Red as they Lower Blood Sugar
  • Cucumber
  • Parsley
  • Red & Green Peppers (I use Dehydrated I had Prepared Earlier)
  • Salt & Pepper to Taste
  • PASTA (I Use Any Pasta That I Have in My Cabinet)
  • Mayonnaise (Enough to Mix Ingredients Together)

I chop all of the Vegetables, add cooked, drained Pasta  and add enough Mayonnaise to Mix Together Nicely (you can use more or less to your liking).  I Salt and Pepper, add Parsley and Whola…you have a meal or a side dish.  It is a meal for me and it works well for my husband’s diabetes.  I see this dish as a win-win dish.  It’s really fast and good for you and your family.

SQUASH (YELLOW & ZUCCHINI), ONIONS, TOMATOES &

CUCUMBER

 

You can make Fried Green Tomatoes, Fried Yellow Squash, Zucchini Bread or Grill Zucchini with Olive Oil, Salt, Pepper, Parmesan Cheese, Tomato & Basil & Garlic…for about 1-3 minutes or Broil…mmmmmmmmm Good! You can add cooked Bacon Crumbles as well. Slice & Dip Zucchini in Olive Oil, Add Salt & Pepper, Tomato (Tommies sliced), Parmesan Cheese, Basil, Garlic to taste, Grill 1-3  min. depending on size of slice, add Crumbled, Cooked Bacon.

Strawberries are in season in my area.  My Blueberries and Blackberries are ripe in my area as well.  This is my first year with my Blackberry Bushes and Blueberry
Bushes, so I had only a Handful.  We are eating them right off the Bush…maybe I will do better next year as they will be older.  

I have picked 3 1/2 gallons of Strawberries for myself and have given away 2 gallons.  My Strawberry Patch or Bed really produced this year.  I dehydrate and freeze as that way I can make jam quickly or my husband can eat them right out of the Jar dehydrated.

 I saw Excalibur had a small Dehydrator at the store…I believe it was a 5 tray…I have a 10 tray, but I would try the 5 tray to see if I liked Dehydrating or not.  I love Dehydrating…easy and not as much work as canning and preserve the fruits and vegetables for longer periods and are light weight so if natural disasters come, grab and go in a gym bag.  The Fruits and Vegetables retain their nutrients better as well.
